Is there anything better than a stack of pancakes? Especially on a rainy Monday morning?
I’d been craving pancakes since Saturday, when I went out for a late breakfast with friends. As is often the case at trendy brunch spots, pancakes and maple syrup were on the menu – but with bacon. That’s not really my vibe, so I asked to substitute the bacon with fruit. No, we don’t have any fruit, she said. Gah! So, despite the delicious avocado and poached egg on soy bread, I was left with pancakes on the brain for the next 48 hours.
Finally, I had the time to make pancakes for the family this morning and it was amazing. The cooking and the eating, both were great fun. I used a simple and easy recipe from BBC Good Food and added syrup, berries and a dusting of icing sugar. The whole family had some but, admittedly, I ate most of the stack. I guess that’s what happens when you’re eight months pregnant!
